First off, if you’re still reading this that means you either a) relate to my weirdness or b) didn’t even see my vlog… which in that case, well, thank you… just, thank you.
Second, I realized that I’ve been talking mostly about my internship lately, and a little bit about exercise, but hardly anything about my eats! A girls gotta eat, right?
Dinners look pretty much the same week to week in this household… a common weekday rotation looks something like this - Monday: pasta, Tuesday: loaded baked potatoes, Wednesday: baked chicken/salmon, Thursday: stir fry/rice bowls, Friday: turkey burgs. But depending on my mood, other things end up in my grocery cart that I tend to get hooked on for a while.
My current food-loves are:
Avocados, naturally… mostly eaten on toast, with or without an over-easy egg on top.
Goat cheese… typically eaten straight from the container with a spoon while sipping wine and cooking dinner. Sometimes it winds up in the pasta or rice bowls but it’s just so good on it’s own! So glad CostCo sells them in a double-pack. It’s so necessary
Chia seeds… mostly thrown into oatmeal for some added fats, protein and texture. Fun fact - overnight oats with just oats, almond milk and chia seeds (no yogurt) works JUST as good as overnight oats with yogurt. Topped with the obligatory PB.
Gelato… Target’s brand Archer Farms recently started their own line of gelato flavors. I’ve only tried the tiramisu but trust me, that’s enough to make you fall in love. It says it’s imported from Italy, which I kind of doubt to be true but whatever, it’s still delicious. Screw froyo, gelato is where it’s at.

I totally thought that gelato was cake!! HAHA you can see what’s on my mind…Chia seeds are my jam..and by that I mean I put them on my jam for PB&J’s hahaha. SO GOOD. I need to try avocado toast already, it looks amazing. With lemon and pepper, yes that’s what I’ll do!
A little garlic salt and pepper is my go-to topper.. mmmmmmmm. Need to try that chia-PB-J thing, I eat PB&J at least once a week hah
I conveniently need to go to trader joe’s today to pick up some vinegar. I may just need to scope out the gelato situation now
Seriously, why isn’t gelato more readily available in the US?? Its becoming a staple in my freezer.
Shut the front door. Target has gelato now?! That’s even better than ice cream!! I’m glad you’ve been eating too. Life’s to short for just work and exercise
YES! I was like “hm I wonder if this will be good”, and then when I got home and dug in I was dying. SO so good.

Gotta get on board with the avocado toast, it’s the easiest thing to make and it’s de-lish!
Everything in the post has been current daily eats for me as well (except the gelato, but replace that with ice cream). I actually made avocado toast the other day WITH goat cheese and it was effing amazing.
I did that too and was like, blown away by my creation.. I need to do that again, like now.
I actually prefer my overnight oats without yogurt! Chia seeds are the best addition ever though.
And avocado toast has my heart forever. Avocados are so damn expensive in California right now though which I don’t understand because WE GROW THEM HERE!! Haha.
Ya that gelato looks like cake to me!! Either one would be devoured if it were in front of me right now
And yes to avocados. On everything and anything. I love mine on rice cakes with tuna
