Not So St. Patty’s Day Weekend

The plan was to do a weekly update on my internship but not gonna lie, I’m feeling less than thrilled to talk about it right now so I guess I’ll just post-pone the updates until I feel like it. Honestly who even wants to know about it?! Ok well maybe some of you, but, sorry.

So since we’re not talking about internship things, let’s talk about life things.

This weekend we had beautiful weather here. I’m talking 75 and sunny during the day and low 60s at night. Just absolutely perfect.

I took full advantage of this and sat out by the pool for a bit yesterday. Unfortunately I underestimated the sun and ended up a little crispy. Normally I don’t burn that easily, but considering some parts of me haven’t seen the sun in a few months (my belly? ah!) I guess I shouldn’t be surprised. Funny how we have two pools in our apartment complex and live 20 minutes from the beach, yet still can’t seem to find the time to enjoy it… that needs to change!

Today I was determined to get outside again somehow, so when my friend Katie texted me telling me she was working the farmers market today I told her I’d stop by with Annie to give her some company.

She’s works for a hospital that puts on a farmers market in the parking lot every Sunday, and as a dietitian she’s sometimes asked to man the “nutrition table”.

By the time I got there, I realized I didn’t have a whole lot of cash on me to buy much. But one local business, and honestly now I can’t remember the name of it, was giving free samples of their smoked mahi-mahi dip and it was amazing, so I scrounged up 6 bucks in change to buy a tub of it.

Annie wore herself out tugging on the leash trying to follow every smell she picked up with her little nose. Poor doggie, I tortured her by bringing her around all that food! Though lots of people who stopped to comment on how sweet she was gave her treats. So many random people carrying around dog treats. Makes me think, should I be carrying Milkbones in my purse?

After that I came home, ate like half of the smoked fish dip (portion control, shmortion control) and hit the books for a few hours of busywork… I mean, homework. And now I’m just as worn out as the pup. I realize now that I failed to do anything St. Patrick’s Day related this weekend, although I did wear an emerald-green cardigan today! Fail?

What I Ate Wednesday: Photo Fail

Alright so it’s been a while since my last What I Ate Wednesday post, and I was hoping that I could do it successfully today but of course I didn’t take enough pictures! Blast

Regardless, I’m still going to tell you what I ate. Because I can.

Breakfast was a super rushed bowl of oats and a cup of coffee, I actually only had a few sips of the coffee.. I was running really late.

In the oats went diced apple, peanut butter and these amazing free samples of flavored brown sugar that I got from a food show. I could eat it straight.. I mean, I may-or-may-not have done that already..

I only had a half-day at my internship, so no free hospital lunch today. In an effort to not buy a salad from Panera on my way home, I talked myself into dippy-eggs.

Spruced up a bit by serving over sautéed broccoli and onions. Plus coffee and toast.

For a little afternoon pick-me-up I had two Oreos. I made the mistake of bringing Andrew to the grocery store with me and I swear he’s like a 4-year-old kid sneaking food into the cart. Did you know that there is 150 calories in only TWO Oreos?? Plus I can’t pronounce half of the ingredient list. Mmmmm.

After a much-needed 4 mile run, I was soooo ready for dinner. I had put a pot roast in the crockpot before I left in the morning, and it was making the apartment smell so heavenly all day long.

Naturally, I forgot to take a picture of it but it was SO easy and so good. I just stuck a 1 and 1/2 pound top round (a leaner roast cut than most) in the bottom of the crockpot, seasoned it with S&P, rosemary and thyme. Then poured in 2 cups of beef broth and added baby carrots, a quartered onion and tri-color potatoes on top, set it to low and let it go for 10 hours. You could easily do this with a couple of chicken breasts too.

Speaking of beef.. remember how I thought my iron levels were a little low? Well I didn’t get any blood tests done, but after a few weeks of really ramping up my red meat consumption, I do feel better and have more energy. I think it was a combination of low iron levels and maybe eating a little too much sugar earlier in the day.

And that is exactly why I love nutrition. I didn’t need a doc to tell me anything, and I didn’t need any drugs to fix it. All I did was adjust my eating habits and voila!

Happy Halloween!

Annie was a pretty princess for all of 5 minutes. She was not havin’ it.

 

 

Since I’m too poor to be in the spirit this year, I was going to have a little collage of my past Halloween costumes. I quickly dismissed that idea though once I started looking through my pictures…. college is not a time of decency, my friends.

Not only did I not have a costume this year, I failed to wear anything festive at all! Last night I was looking through my closet and realized I do not own a single orange article of clothing. Huge fail.

What my wardrobe lacked in Halloween spirit, I made up for in candy.

We hosted a Candy Sale in the cafeteria at the hospital today. You could stop by and fill up a cute little Halloween bag as much or as little as you wanted since we charged by the ounce. All proceeds went to United Way and we actually made quite a bit of money!

The candy sale lasted close to 5 hours and I manned the table the entire time, so I ate straight candy for lunch. I’m not joking. Not my proudest moment but.. it’s Halloween, what was I suppose to do, say no to all those malted milk balls? Oh and my feet were absolutely screaming at me by the time I went home today. I don’t know why but my feet hurt worse when I stand in one place as opposed to walking around all day? Hm

I couldn’t wait to put these on when I got home. Andrew’s mom had sent me these slippers last week, along with an enormous box of candy. Good lord I’ll be glad when all this candy is gone. I tried to give some of it out to trick-or-treaters tonight but we got a total of 3. Another huge fail.

 

And tomorrow is November. I’m actually really excited for this month because I’ll be traveling a little bit around Florida, seeing my family and tackling those goals I talked about on Monday.
