WIAW: Food Trucks

Before I get into what I ate today, let’s talk a little bit about last night.

FOOD TRUCK RALLY!

Prior to moving down to south Florida, I had never experienced the glory of a food truck. Apparently it’s a big thing down here though. The best part is that certain nights of the week are dedicated to rallying a bunch of the trucks together in a specific location.. talk about heaven. Andrew got a pulled pork sandwich from a BBQ truck while I went with a Columbian-style truck but oddly ended up with a chicken gyro. Still good.

 

Ok so on to my eats for the day. I woke up and quickly drank my coffee and scarfed a piece of banana bread (yes I made more) so that I could get my butt out the door for a run. Post-run I chugged a bunch of water and had part 2 of breakfast.

Two apples microwaved with cinnamon, topped with a bit of peanut butter and maple syrup.

Annie had to get in on this too. Apple chunks are her favorite snack.

 

After a little bit of running around town to do some errands, lunch was on the brain. I had a can of chickpeas in the pantry that was begging to be made into hummus so I threw them in the food processor with some tahini, garlic and olive oil and let it whirl.

I ate a bit of the hummus with some tortilla chips but figured I needed a little more substance to fill me up. A thick smear of hummus on a whole wheat tortilla with turkey and spring mix did the trick.

 

This afternoon I made more bread, but instead of banana this time it was chocolate chip pumpkin. I used the same recipe as my banana bread but used a can of pumpkin puree instead of bananas, and added pumpkin pie spice, a little brown sugar and chocolate chips. It’s not for me (I’ll explain more tomorrow), but of course I had to try a slice make sure it came out okay. I also had a few spoonfuls of this for a snack…

 

And my trusty crockpot made dinner a breeze.

Teryaki turkey meatballs with peppers and onions on top of whole wheat noodles.

WIAW that kind of day

Forgive me if I’m too sporadic today, I’m writing this while watching Spongebob Squarepants. Don’t ask.

My day of eats was less than stellar, and by that I mean it was kind of boring but HEY ya eat what ya got, am-I-right? I also blame it on the fact that I’m in some kind of funk today. Maybe because it’s Wednesday? Maybe because I have a ton of things on my to-do list that have yet to be crossed off? Maybe because I didn’t drink enough coffee? (Impossible, it was a 3-cup kind of day) Maybe because I’m still taking all of my photos with Instagram?

Regardless, here’s what I ate today. On the plus side, I did figure out how to import the pictures at a larger size!! Weeeeeeee

This was cup number 1 of the day. I thought I’d spare you a few pictures of just coffee and let you multiply that by 3 in your head.

Breakfast was an easy one today. Two eggs over easy and wheat toast for dippin’.

Yes I eat the yolks and yes I use real butter on my toast. I live and die by my philosophy “everything in moderation”, and I’ll reiterate that in probably every single WIAW post. And, yes, I’m still working on making my eggs pretty, but they taste awesome.

Next would be my, well, second breakfast. Unpictured because it looked like slop but it was a lovely combination of oats, apple chunks, cinnamon and peanut butter.

This was followed by a late lunch, also unpictured, of some leftovers from last night’s dinner. Tortellini with loads of spinach and onions, chicken sausage and marinara sauce. I had a small bowl of this and followed it up with something sweet.

More apples! Apple chunks and cinnamon heated in the microwave for 1-2 minutes then topped with a bit of honey and peanut butter. Sooooo so good and works great as a snack or dessert.

I was NOT feeling like cooking anything for dinner. I even begged Andrew to go out to eat but he was also in a funk and just wanted to be lazy the second he got home from work. Alas, I settled for something fairly easy to prepare.

Taco taco, burrito burrito. South Park? Yes? Ok well taco salad for me and burritos for the man. A good trick (if you eat beef at all) to cut down on both cost and consumption of red meat is to cut your ground beef with another protein, like beans. Instead of using a full pound of beef, I always do 1/2 pound with a 15 ounce can of either black beans or chickpeas (rinsed well). Just mush the beans up a bit and despite a little color difference, the taste is the same, if not better. It’s also a good way to up your fiber intake.

Now to start checking things off my to-do list…
