Differently, Lately

Things that I’ve been doing differently as of late…

  • Not eating breakfast. Ok so that’s a lie, I do still eat breakfast everyday but not immediately upon waking per usual. Now I just drink coffee in the morning until I get to the hospital and eventually I roll into the cafeteria for breakfast, usually around 8 or 9. Hey, it’s free! And they have little individual “juice boxes” of dark chocolate almond milk. Winning.
  • Speaking of coffee, I’ve been drinking it black for a few months now. Not even a hint of sugar or cream. My teeth are suffering, but luckily I’ve found that brushing them with plain baking soda takes out the stains…. yay for Pinterest experiments!
  • Going to bed no later than 10pm. Every night. Internships turn you into an old lady.
  • Not drinking wine on weekdays. Like I said, internships turn you into an old lady. Plus they suck the life out of your bank account to the point where you can’t even justify buying a 9 dollar bottle of wine. Thank god for tax refunds, I need my pinot!
  • Eating sweets everyday, in some form or another. I know, boo-hoo right? But seriously it’s making me feel like crap, I need to stop this madness. Too much sugar means too many mood swings, at least that’s how it affects me anyway.
  • Obsessing over this whole apartment-search thing, it’s taking more patience than I can muster up. I want to move into a bigger place SO BAD, like now, or yesterday. And I wouldn’t mind having my own bathroom.. sharing with a 24 year old guy isn’t fun, no matter how much you love them. And I want to make my own little space for a yoga shrine or something. Don’t judge me.
  • Talking to my brothers more. This isn’t a bad thing, and I hope it continues. They’re both older (27 and 30) and we didn’t have the best relationships growing up, but the older we get the closer we get. It’s just hard now that I live 1500 miles away from them. All the more reason for them to visit me.
  • Listening to one of the Spanish hip-hop stations on my way home. Did you know that Miami is populated by more than 70% Hispanic residents? Granted I live north of Miami but we get all the stations, and it’s fun to try and figure out what the radio DJ’s are saying. Plus you get a side of Pitbull you’re not used to:

Thursday Thoughts: Foodservice Management is fun?

Last time I talked about my internship, I wasn’t enjoying it too much.

I’m pleased to say that I am liking it again. I’ve said it before but Foodservice is not my thing, but I’m glad I’ve had such a good experience thus far.

If you’re just tuning into my blog, in short, I’m a Dietetic Intern and am currently completing my 8 week Foodservice Management rotation, and I have only 2 weeks left! If you’re interested to know more about my journey through Dietetics, I talk about it here.

Anyway, I started out loving it… basically my preceptor is awesome. She has a very similar personality to me and is a wealth of knowledge when it comes to management. I’m lucky to have been placed in such a large hospital too because the opportunities to learn are endless. But I was getting a little restless and bored toward the mid-point because, like I said, Foodservice is not my thing.

We have a list of required tasks that we are to complete before our rotation is over, and I wanted to combine a few of them so I had bigger projects and not just busy-work. In order to kill two, well I guess three birds with one stone I combined event planning, menu creation and nutritional analysis. It ended up being a really fun project for me. Here’s the outcome…

We were asked to cater a breakfast for the Broward Heart Walk, which is a 5k run/walk put on by the American Heart Association in order to raise awareness of cardiovascular disease and raise funds for research. This breakfast was specifically for the Executives (read: CEOs and CFOs) from different hospitals throughout Broward County (the county where Ft Laud is located). Meaning it was a fancy-schmancy ordeal.

The first half of the event was a meeting in which the CEO of our hospital spoke, followed by one of our Clinical Dietitians and a cardiovascular disease survivor who had undergone quadruple-bypass surgery in our hospital just this past summer. My favorite part? They all mentioned MODERATION numerous times! My favorite word.

The second half was the breakfast. In collaboration with my preceptor (the Director of Food and Nutrition), we planned the event details such as how many tables and what linens we were using. The menu was my part though. I searched for recipes, made them “heart-healthy” and added my own twists, gave them to our Executive Chef to test, and planned the menu from that.

Along with planning the menu, I made “heart-healthy” recipe cards, which included some of the items that we served at the breakfast. We sent them off to Marketing to make them all pretty. The recipe cards also included the nutritional analysis per serving, following the American Heart Association’s Heart Check Nutritional Guidelines.

Since we had an omelet station, I knew people would be gathering around the buffet table with a little bit of time while they waited for their omelet. I figured it would be fun to add a little touch by placing “Did you know” facts around the buffet table.

I had many people come up to me and compliment the creativity.

Afterwards, naturally there were leftovers so we sat down for a late breakfast. I loved everything, especially the frittata and sweet potatoes. I’m so glad it went off without a hitch.

If there’s one thing I learned from this, it’s that I really love creating menus and recipes. That’s the foodie in me coming out though, so I guess I wasn’t entirely surprised by that. Now that this event is over though, my Management rotation will start winding down and I’m almost sad to see it go… almost being the key word ;)

WIAW Crazy Day

Well helloooo everybody! I have been go-go-go since the minute I woke up this morning at 7am… I had so many errands to run, I was all over town today. Most of them were in preparation for my internship rotations that are starting in two and a half weeks!! Eek! I’ll leave the explanation for tomorrow on Thursday Thoughts.

One thing that I did today though was grocery shop. We were out of everything, and by that I mean we didn’t even have COFFEE. I die. But luckily that meant I was starting my day with a little trip to Einstein Bro’s.

Why yes, that would be a pumpkin scone. It was only $1.50, what’s a girl to do? I justified it by the fact that I couldn’t go grocery shopping on an empty stomach.

My grocery shopping goes a little something like this: CostCo once at the beginning of the month for staples, and then weekly trips to Publix to fill in the gaps. I’m on a super tight budget this year and since I’m a “closet type-A”, this plan works great for me (I don’t like to admit it, but I love lists).

At CostCo, these somehow found their way into my cart and quickly became my snack on the drive home. I love these, but they require a bit of self-control since they are basically cashews and almonds glued together with honey.. hah.

Since I still didn’t have all the fixings for a whole meal yet, I had to grab something quick and head back out to make a trip to Publix.

Also a CostCo purchase.. and yes I buy my Greek yogurt in bulk because I’m a nut-job.

FINALLY at 2pm I was able to actually have a real meal!

Scrambled eggs with spinach, onions and chickpeas with toast. Followed by an unpictured apple. Breakfast is acceptable for any meal at any time, don’t ever let anyone tell you it’s not!!

Then after a few more hours of productivity, dinner was on the brain.

Salsa chicken with spicy brown rice and a big bowl of rabbit food. Yum.

And if I can help myself from sticking my hand in the bag of cashew clusters again, then I’d say that’s pretty much it for today since I have a date with my pillow at 10pm sharp. I’m hoping that a pumpkin scone will magically appear in my kitchen overnight so I can have that for breakfast again… if only…
