Reason to Celebrate!

Can’t believe it’s already Sunday.. where did the days go?

My last post I mentioned I was “unofficially” done with my first internship rotation, well now it’s official… I’m done! Guess what that means? I now have 3 weeks off for the holidays before starting back in the new year. Amazing.

Anyway, on Friday after I was done, my friend Emily from college (yes, same name, means she’s equally as awesome) paid me a visit. She was in Marco Island for the week with her family and made the short drive across the state to come spend the weekend with me.

When she got into town, we popped open a bottle of wine and got ready to go out for dinner. We had means to celebrate… I was done for the year and she had just finished her dietetic internship at the end of November. Yes, same name and same career path. Double awesome.

For dinner I took her to my favorite restaurant in Ft Lauderdale… 15th Street Fisheries. It’s on the intercoastal, near Port Everglades where all the cruise ships come in and out. Beautiful views and super fresh seafood.

After dinner, we hopped on the water taxi to head downtown to the bars off of Las Olas Blvd. All of the gorgeous homes along the intercoastal waterways were all decked out in their holiday flair so it was quite the scenic ride.

We stayed out pretty late because the bar we ended up at was so fun. There was lots of dancing, and I think that might count for my Elf for Health task of working out with a buddy, right? In my book it counts.

On Saturday we had planned on going to the beach but it wasn’t sunny at all so we just did a scenic drive around south Florida. My wallet and my body were not really down to go out another night so we decided to stay in and lounge around with Andrew and the pup. We watched the movie Ted, which by the way is frickin’ hilarious.

She left pretty early this morning, so I pretty much just hung out around the apartment all day today. I think I’m fighting off a cold because I lost my voice and my throat is a little funky but it doesn’t seem to be getting much worse… so I just slept all day, and drank a lot of orange juice.

After a fun weekend, this week is looking pretty low-key. We aren’t heading back to Michigan for the holidays until later this week so I’ve got a few days to just get organized. I’m looking to do a little better with the Elf for Health tasks this week, as last week was a bit of a flop.

One of the tasks is to bake cookies (Wednesday), and I want to make something new and funky! Does anyone have any fun holiday cookies to suggest?

It’s beginning to look a lot like Christmas…

sunshineUhhh… okay so maybe not.

But despite the fact that it’s still 80 degrees, I’m actually starting to feel like it’s really Christmas time! There’s a large Jewish population in south Florida so there’s a lot of holiday going on around me already with Hanukkah.

 

Speaking of, my amazing (Jewish) friend Jaime hosted a Gingerbread & Wine party last night.

At one point, she was unsuccessfully assembling her house with icing and said “I’m a Jew, I’ve never done this before… I only had this party so I could drink wine”. And that is exactly why we’re friends.

Of course I chose a kit that was a gingerbread VILLAGE, so instead of one normal-sized gingerbread house, I had to assemble 4 small ones. I pretty much spent all night putting up walls and eating icing off of my fingers. Fail.

It’s okay though because I met some new friends, and had a few well-deserved glasses of Chianti. I say that because I finished my final project for my Foodservice rotation earlier that day, so it almost felt like “finals” week for me was almost over… except for I’m not technically a student… just as-poor-as a student. And I get the same holiday-break time as the students. Yay!

 

I’ve also been listening to a lot of Christmas music, namely Michael Buble (swoon) and Nsync.

Check out those hairstyles. But I can’t say I didn’t love Justin Timberlake’s frosted tips back then. And I would be lying if I said he wasn’t my ultimate celebrity crush still, to this day. Oh JT.

 

Elf4Health

Ok so yesterday we were suppose to clean out our fridge/pantry. Well considering I went straight from my internship to the party, I did not do this. It’s okay though because I justify it by the fact that I cleaned out my fridge not too long ago. And I really need to go grocery shopping so there is basically nothing in there anyways.

Today we were to eat 3 servings of veggies by 2pm. I did, I just didn’t snap a pic to document it. But I had a hugeeee heaping salad for lunch at about noon plus some carrot sticks for a snack before. Go me!

Monday Munchies: Recipe for water?

I feel like my eyeballs are floating.

No but really, today’s Elf for Health task was to track your water intake, and try to drink as many ounces as you weigh in pounds. Uhhh hello. By no means am I light-as-a-feather, so this wasn’t easy.

By noon I had drank 60 ounces… I was a little over zealous at first, so I slowed down a little bit in the afternoon. I e-mailed my Elf-buddy telling her to chug chug chug, like I was back in college at a frat party or something, how motivational is that? By the way, my Elf is also an Emily, small world… go check out her blog!

In the end, I drank 140 ounces of water.. over my goal! Weeeeee I kicked butt.

 

I had a Roasted Red Pepper Vegetable Lasagna recipe that I had planned to share with you guys today, but I need to work on my final project for my Foodservice rotation (budgeting and staffing and meal cost… gag). Tomorrow night I’ll be at a fun little holiday get-together and this project is due Wednesday so I better get-to-gettin’!
