Good Eats

So even though I did exactly what I said I would do this weekend (nothing, pure unadulterated nothing), there was bound to be some good eats.

Saturday morning I woke up and made my all-time favorite breakfast, toast smeared with avocado, sprinkled with garlic powder and cayenne pepper and topped with over-easy eggs. So simple but so good.

Earlier this week I picked up Applegate Natural Uncured Pepperoni on my shopping trip, so I knew pizza was in the near future. Instead of picking up Publix dough from the bakery like I have been lately, I decided to make my own. I’ve done it plenty of times before, and it’s so easy. I follow this recipe, except I use all whole wheat flour as opposed to part white/part whole wheat and it turns out great!

Eating pizza on a Saturday night is good, but eating pizza on a Sunday morning is even better. I’ve been known to eat leftover pizza, straight from the fridge for breakfast. Old habits die hard? My mom would always yell at me “get a plate at least!”, but I mean c’mon, it’s pizza, you eat it with your hands anyway right?

Well, I decided to get a little fancy with my leftovers this time and heat it up under the broiler with an egg on top! Seriously I know this isn’t new, people eat fried eggs on pizza all the time, but I’d never tried it before and it was fab-u-lous. Eaten with a fork and knife at the table instead of standing in front of the fridge, I’m really getting fancy here. And the egg made it feel a little more like a real breakfast.

eggpizzaBreakfast number two on Sunday (because Sunday deserves two breakfasts instead of lunch) was a new smoothie combo for me: banana and coconut. I bought Oikos coconut greek yogurt at Costco (that sample lady totally veered me away from my typical Chobani purchase) and knew I wanted to try it in a smoothie. Banana, coconut yogurt, vanilla protein powder, handful of ice cubes and enough milk to get the blender going. New favorite combo.

For dinner on Sunday night we actually went out to meet up with a client and his wife from Andrew’s work (so I lied, we did do one thing). I made the mistake of suggesting a restaurant on Fort Lauderdale beach.. um hello? It’s spring break for almost every single college/university right now. Stupid. It was packed and it took forever to find parking. But as always in South Florida, the people-watching provided endless entertainment. I ordered a simple salad with grilled mahi-mahi and a papaya dressing, nothing to write home about. But the wife of the client has celiac disease, so I had an interesting conversation with her about gluten-free baking while Andrew talked business.

Monday Munchies: Zombies and Pizza

Well hello there everyone! Long time no see.

Want to know the real reason I didn’t have anything to post about this weekend?

Somehow Andrew talked me into this and we ended up watching the ENTIRE first season. And we will most likely watch the second season throughout this week so that we can get on board with the third season that premiered yesterday. This show is gruesome. You’ll catch me cowering behind a blanket during all the gross zombie parts, which is like the whole time.

Anyway, due to my lack of productivity this weekend, I unfortunately don’t have any real recipe for you guys today. But fear not! I still have something to share.

PIZZA! I swear I don’t eat pizza as much as it may seem, but I do love it and find nothing wrong with eating it on occasion. Carbs are not the enemy, my friends. (Although, if you have legitimate health reasons for not consuming wheat/gluten then you will want to consider a gluten-free option for the crust).

Here is my suggested combination for the best pizza ever

  • Crust
  • Basil Pesto
  • Fresh shredded or sliced mozzarella
  • Large tomato, sliced thin

Spread a thin layer of the pesto over the dough, sprinkle or layer with mozzarella cheese and then top with thin slices of tomato. You really want the tomato sliced thin because you’ll only bake the pizza at for 15-20 minutes (at 425*) and they need to roast so they become sweet and juicy.

I usually buy raw dough from the bakery at Publix and roll it out myself. Although sometimes when I’m feeling particularly fancy, I use this recipe to make homemade whole wheat pizza dough. And instead of mixing flours like the recipe suggests, I just use all whole wheat flour and it turns out just fine.
