Are you ready for a random string of thoughts?

1) Today is Round 2 of Elf for Health! I wasn’t in the first round, so I’m excited! We’ll be getting our elves e-mailed to us sometime today and tomorrow is the first task for the round. Since we have a task to do everyday (except Sundays), I won’t have any excuse not to post every day! Are ya ready to see more of me? Yeah, yeah you definitely are.

2) I have pretty much all of my Christmas shopping done, and that makes me so happy and much less stressed. I’m awful at buying gifts for people, I guess I just lack the creativity… but this year I’m proud of the things I came up with! Sticking to a budget helped steer my choices… although even with the budget, I am now completely and utterly broke. How many more months til I’m not an intern anymore?

3) Speaking of being an intern.. I only have 1 more week of Foodservice Management! I’ll do an update post later in the week when I can see the light.

4) This morning I woke up with a grumbling tummy and was immediately inspired by the leftover can of pumpkin sitting in my fridge; Pumpkin pie pancakes anyone?

pumpkin pancakesI combined 1 cup whole wheat pancake mix, 1 cup almond milk, 1 cup pumpkin puree, 1 scoop vanilla protein powder, 1 egg, and a hefty shake of cinnamon and pumpkin pie spice. These were unreal.Words cannot express.

5) Yesterday we went on a huge cleaning-spree of our apartment, and it feels so good to know that there’s no longer any dog hair under the couches. Dusting, vacuuming, organizing, laundry-ing, Magic Eraser-ing… have you ever used a Mr. Clean Magic Eraser? There is literally nothing it can’t do.

6) Lastly, Katie over at Blonde Ambition nominated me for the Beautiful Blogger Award! This is to recognize bloggers that you feel are hard-working and inspirational. The concept of nominations is similar to the Liebster Award, which I posted about last week, so I’m not going to do the whole post, but I nominate every single one of you as Beautiful Bloggers! Everyone that reads my blog, whether you comment or not, makes me feel appreciated and you all deserve to be recognized for your inspiration.

And that’s enough rambling for now.

WIAW: Lots of greens

So just an FYI, I almost boycotted taking pictures of my eats today. I was extra hungry today and the last thing I wanted to do was stare at my food in a photo… I wanted it In. My. Belly.

I don’t normally workout in the mornings but today I was out the door running by 8am because I wanted to start today off on a productive note, but it really just attributed to my increased hunger all day.

Alas, I did manage some decent snap shots.

When I woke up, I ate a pumpkin cookie while I drank my coffee. I wanted something small before my run and that was the first thing I saw. Win. Afterwards, I dug into some deeeelicious pumpkin pie overnight oats.

For lunch today I had leftovers from Anthony’s Coal Fired Pizza that we ate for dinner last night. Salad with tomato, red onion, chickpeas, olives and hard-boiled egg topped with red wine vinaigrette and a little parm….

And a slice of sausage and broccoli rabe pizza. I personally love broccoli rabe but it IS very bitter and pungent, it takes some getting used to.

Andrew was off work today for some appointments (and coughbecausehegotanewvideogamecough)and bought a bag of candy corn when we were at the store, so of course I had to munch on them all afternoon. You either love it or hate it. I clearly love it.

For dinner we had turkey burgers that were a result of some recipe development I’m doing for a Dietitian. They were full of spinach and goooood good good. Served on half-size whole wheat pitas with Greek yogurt, tomato, spring mix and onions.

I also snacked on a few tortilla chips while making the burgers.

There were a lot of dark leafy greens in my food today so I think my vitamin K and iron levels are looking pretty good right now. Greens are top of the list for me when it comes to veggies. They’re just so easy to put into meals and can taste really good, if you have enough garlic that is…

Monday Munchies: It’s All About the Pumpkin

One would think that this means it’s raining. But no… it’s not. And 75 degrees at 7:30 in the morning is not what I call Fall weather… Apparently Florida missed the memo. I get another soggy and humid month before the rainy season finally breaks.

But enough moping, I’m still trying to embrace Fall and in spirit of this I have an amazing Monday Munchies recipe for you! I know last week I was still trying to be fair to my summer squash but I’ve moved on to the real star… Pumpkin. I may or may not have just had pumpkin pie oats with some pumpkin spice coffee on the side for breakfast… I mean, what? No… I’m not that obsessed I swear.. or maybe I am, and you should be too because of this recipe. Ready? Go

White Chocolate Oatmeal Pumpkin Cookies

  • 1 egg
  • 1/2 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1 and 1/2 cup oats
  • 3/4 cup whole wheat flour
  • 1/2 cup brown sugar
  • 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • **1/2 cup white chocolate chips

  1. Combine egg, vanilla and pumpkin puree in a large mixing bowl
  2. Stir in brown sugar, cinnamon and pumpkin pie spice
  3. Add oats, flour, baking powder and soda, and salt… mix well, dough will be sticky
  4. Fold in white chocolate chips
  5. Drop spoonfuls of dough evenly onto baking sheet
  6. Flatten each cookie with the back of a fork (they hardly spread while baking)
  7. Bake in oven at 350 for 10-12 minutes
  8. Makes 18 small cookies or 12 larger cookies

I starred the white chocolate chips because you could easily do a glaze on top instead.

Seriously though, whole wheat flour? No butter or oil? Only a half cup of brown sugar? I’d eat these babies for breakfast, of course only on days that I didn’t also have pumpkin pie oats and pumpkin coffee… maybe for a snack. I think might need to scale it back a bit with the pumpkin.
